Rainbow Chickpea and Cous Cous Salad

A healthy and delicious salad that looks amazing!

This salad is a great go to that I've used for entertaining, Christmas parties, BBQs and is a family favourite- including with the kids!


The healthy spread- everything you'll need before dressing the salaad!

This recipe is dairy-free, and chock full of veggies and plant protein.


Chickpeas are high in protein, fibre, complex (low GI) carbohydrates- contain Vitamin B6 for brain function, iron, folate, and more vitamins and minerals vital for energy production, muscle function and blood pressure regulation.



Perfectly fluffy cous cous!

The trick to fluffy cous cous is to add a drizzle of olive oil when adding boiling water! For this recipe- it's one cup of dry cous cous, one cup of boiling water, and a drizzle of olive oil. Stir and cover for 5-7 minutes before fluffing with a fork.



This batch was brought to a summer BBQ with friends!
